Golden Lava Bun, known for its soft exterior and creamy salted egg yolk custard filling, is a popular treat. Here's a simplified version of how to bake it:
Ingredients
DOUGH:
- 2 cups all-purpose flour
- 2 tbsp sugar
- 1 tsp instant yeast
- 1/2 tsp salt
- 1/2 cup warm milk
- 1 egg
- 2 tbsp unsalted butter (softened)
SALTED EGG YOLK CUSTARD FILLING:
- 4 salted egg yolks (cooked and mashed)
- 1/4 cup butter (softened)
- 1/4 cup icing sugar
- 2 tbsp milk powder
- 1/4 cup sweetened condensed milk
- 1/4 cup coconut milk
Instructions
STEP 1: MAKE THE DOUGH
1. In a mixing bowl, combine flour, sugar, salt, and yeast.
2. Add the warm milk and egg to the dry ingredients. Mix until a dough starts to form.
3. Knead the dough for about 5-7 minutes, adding the softened butter a little at a time, until the dough is smooth and elastic.
4. Cover the dough with a damp cloth and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
STEP 2: PREPARE THE SALTED EGG CUSTARD FILLING
1. In a bowl, mash the cooked salted egg yolks until fine.
2. Add butter, icing sugar, milk powder, sweetened condensed milk, and coconut milk. Mix until smooth and well combined.
3. Place the filling in the fridge for 30 minutes or until firm.
STEP 3: ASSEMBLE THE BUNS
1. Punch down the risen dough and divide it into 10 equal portions.
2. Roll each portion into a ball and flatten it into a circle.
3. Place a spoonful of the salted egg custard filling in the center of each circle.
4. Wrap the dough around the filling, pinching it closed at the bottom to form a bun.
5. Place the buns seam-side down on a baking sheet lined with parchment paper.
STEP 4: FINAL PROOFING
1. Let the buns rest for another 30 minutes until they have doubled in size.
STEP 5: BAKE
1. Preheat the oven to 180°C (350°F).
2. Brush the buns lightly with egg wash (a beaten egg mixed with a splash of water).
3. Bake the buns for 12-15 minutes or until golden brown.
STEP 6: SERVE
- Let the buns cool slightly, then enjoy them warm so the filling remains molten.
These buns are soft with a creamy, slightly sweet and salty custard that has the characteristic flavor of salted egg yolk—a delicious recreation of BreadTalk’s famous Golden Lava Bun.
