How to Cook Singapore's Wanton Noodle?

Here's a recipe for wanton noodle, a popular dish in Singapore:


Ingredients:

- 500g wanton noodles

- 200g char siew (Chinese BBQ pork), sliced

- 1 cup Chinese choy sum (Chinese flowering cabbage), blanched

- 6-8 wantons (dumplings)

- 1 tablespoon light soy sauce

- 1 tablespoon dark soy sauce

- 2 tablespoons oyster sauce

- 1 teaspoon sesame oil

- 1 tablespoon cooking oil

- 3 cloves garlic, minced

- 1/2 cup chicken stock

- White pepper to taste


For wanton filling:

- 150g minced pork

- 6-8 shrimps, peeled and chopped

- 1 tablespoon soy sauce

- 1 tablespoon sesame oil

- 1 tablespoon cornstarch

- 1/2 teaspoon Chinese five spice powder

- 1/2 teaspoon salt

- 1/2 teaspoon white pepper

- 1/2 teaspoon sugar

- 1 tablespoon chopped green onions


Instructions:


1. In a large bowl, mix together the minced pork, chopped shrimps, soy sauce, sesame oil, cornstarch, Chinese five spice powder, salt, white pepper, sugar, and chopped green onions to make the wanton filling.


2. Wrap the wanton filling in the wanton skins, sealing the edges with a bit of water. Set aside.


3. Bring a large pot of water to boil. Cook wanton noodles for about 2-3 minutes, or until al dente. Drain and set aside.


4. Heat the cooking oil in a pan over medium-high heat. Add the minced garlic and saute until fragrant.


5. Add the sliced char siew and saute for 1-2 minutes.


6. Add the chicken stock, light soy sauce, dark soy sauce, oyster sauce, and sesame oil. Bring to a simmer.


7. Add the wantons and cook for about 2-3 minutes, or until they float to the surface.


8. To serve, divide the cooked noodles between bowls. Top with the cooked char siew, blanched choy sum, and wantons. Pour the sauce over the top, then sprinkle with a bit of white pepper to taste.


Your delicious wanton noodle dish is now ready to be served. Enjoy!
