Recipe for Roti Canai in Malaysia and Singapore:


Ingredients:

- 3 cups all-purpose flour

- 1 1/2 tsp salt

- 1/4 cup vegetable oil

- 1/4 cup ghee or clarified butter

- 1 cup water

- Oil or ghee for frying


Instructions:


1. In a large mixing bowl, whisk together the flour and salt.

2. Add the vegetable oil and ghee to the dry ingredients, and mix them together with your hands until it resembles a crumbly mixture.

3. Gradually add in the water while kneading the dough until it comes together into a smooth and elastic dough ball.

4. Cover the dough ball with a damp towel and let it rest for at least 30 minutes.

5. Divide the dough into small balls and roll them out thinly with a rolling pin.

6. Drizzle some oil or ghee onto the rolled-out dough and fold it in half. Repeat this step until the dough becomes a small, layered bundle.

7. Roll out the dough bundle to make a flat circle.

8. Heat up a skillet or griddle over medium-high heat.

9. Place the rolled-out dough circular on the skillet and cook it for about 30 seconds on one side before flipping it over and cooking for another 30 seconds on the other side.

10. Continue cooking the roti canai until it becomes golden brown and crispy.

11. Serve hot with your choice of curry, dhal, or other tasty dipping sauces.
