Tian Tian Hainanese Chicken Rice is one of the most famous food stalls in Singapore, known for their delicious and authentic Hainanese style chicken rice. Here is the recipe for their signature dish:
Ingredients:
- 1 whole chicken (about 1.2kg)
- 2 cups of jasmine rice
- 2 cloves of garlic, minced
- 2 tablespoons of ginger, minced
- 4 pandan leaves (screwpine leaves)
- 2 tablespoons of oil
- 1 teaspoon of salt
- 4 cups of boiled water
- 1 cucumber, sliced
- 1 bunch of coriander (cilantro), chopped
- 2 limes, cut into wedges
For the chicken:
1. Rinse the chicken and pat it dry. Rub salt all over the chicken and inside the cavity. Place the chicken on a steaming rack and steam for 30 to 40 minutes, or until fully cooked.
2. Remove the chicken from the steamer and plunge it into a bowl of ice water for a few minutes. This will help the chicken meat to stay firm and juicy.
3. Once the chicken has cooled, chop it into bite-size pieces and set aside.
For the rice:
1. Rinse the rice several times until the water runs clear. Drain the rice and set aside.
2. Heat a pot or rice cooker and add oil.
3. Add minced garlic and ginger and fry until fragrant.
4. Add the drained rice and stir well.
5. Add pandan leaves and salt, and then pour in boiled water.
6. Cook the rice as you normally would, either by following the rice cooker's instruction or by cooking it on the stove. Once it's done, fluff up the rice with a fork and remove the pandan leaves.
To serve:
1. Place the chopped chicken on a plate.
2. Scatter some coriander over the chicken.
3. Serve cucumber slices on the side.
4. Spoon some rice onto the plate next to the chicken.
5. Serve with lime wedges on the side.
